I love to make cakes! But I love even more to make vegan cakes.
It is always magical for me get results without milk or eggs.
I enjoyed a lot to make this lemon cake and the results were very satisfying.

2 cups of flour
1 cup of sugar ( I prefer organic sugar)
½ cup of vegetal oil
¾ cup of water
¼ cup of lemon juice
2 tbs spoons of lemon zest
¼ tbs spoon of baking soda
1 ½ tea spoon of baking powder

½ cup of sugar powder
2 to 3 spoons of coconut milk
zest of lemon to decorate

Pre heat to oven to 410 F .
In a bowl add the flour, sugar, oil, water, lemon juice and lemon zest.. Mix
well until a smooth batter.
Ad baking soda and baking powder.
Place it at the baking pan greased and powered with some flour. And bake
for 40 minutes or until gets brown.
Carefully remove the cake from the form and let cool completely.
Let cool down, Mix icing sugar and lemon juice to a creamy consistency,
spread over the cake and let it firm before slicing the cake.
