I remember when my kids were small and went to birthday parties I asked them to bring a piece of the cake for me. I am crazy about cakes! I have a sweet tooth and always had. The cake is a celebration for me, any party has the high point at the cake. Birthdays, marriage and friends get together, or the 5’clock tea.
I always thought that a cake must have eggs and milk, and I got very surprised how vegan cakes can be very fluffy and delicious. As I turned vegetarian I started to test and develop vegan cake recipes, every week I make something new and we celebrate life here at THe Lodge. My Guests always will be received with cake and coffee or tea.
This recipe is just so good…..Yummy!
Lets make it?
1 cup of whole flour
1 cup of coconut flour
1/2 cup of organic sugar
1 1/2 cup of extra virgin coconut oil
1 tablespoon of molasses
2 tablespoon of baking soda
1 can of 400 ml of coconut milk ( leave at the refrigerator overnight)
1/3 cup of organic sugar
Cinnamon as you wish
1/2 cup of walnut
1/2 cup of coconut flakes
Let’s make it?
Place all the ingredients in a bowl and mix well. Greasy a baking pan and place the batter. Bake for 30 minutes until brown.
For the icing place the coconut milk and sugar at the blender. Cover the cake and spread at the surface the coconut oil and the walnuts. Place at the refrigerator for 4 hours and enjoy it!
